As is so often the case in the restaurant business, the recipe is: it's all about the right mix! That's why we are particularly pleased that our restaurant employs such a diverse range of personalities – in the kitchen, behind the bar and at the tables. What we all have in common is that we do our jobs with a great deal of fun and total commitment. And this is what our colourful bunch looks like:
Alexander Stauder
From career changer to passionate host: our landlord took the plunge into the catering industry by chance - but has never regretted it. Today, he uses his heart, humour and witty remarks to ensure that guests and team feel completely at ease.
Iris Stauder
With an unerring eye for detail and a love of beauty, she is responsible for ensuring that our food not only tastes good, but also looks good. Her signature style is evident in every corner – charming, loving and unlike anything else to be found in Vienna.
Georg Strassnig
Originally from Carinthia, he found his calling in our traditional Viennese restaurant. He keeps track of everything when things get busy and ensures that everything runs smoothly around the clock with a steady hand.
Tobias Prenner
Despite his dual role, he is always in a good mood – as befits a head sommelier and cellar master. He also demonstrates his talent as the man behind our in-house brand. However, he is not only passionate about distilling schnapps, but also about everything to do with good wine, fine vintages and happy guests.
Matthias Kranner
It is important to him that every detail is perfect – from the welcome to the last shot. That's why he is rightly called Mister 100%. And here's another impressive figure: he knows every one of the more than 7,000 bottles in the house.
Matthias Schicht
Here to stay: He began his career in Michelin-starred restaurants and has been the creative force behind our kitchen for 15 years now – we couldn't imagine life without him. He manages to strike the perfect balance between home cooking and fine gourmet cuisine. He is also indispensable because he not only cooks up a storm, but also has a big heart for the team.
Dana Grosschaedl
The next member of the team, who has been the backbone of the kitchen for 15 years. Over the years, he has progressed from top apprentice to top chef to senior sous chef. Known throughout the establishment and team for always being ready to listen and lend a helping hand.
Thomas Kruder
A returnee who completed his apprenticeship with us and went on to prove his worth in some of Switzerland’s top restaurants. He now brings not only Swiss precision but also fresh ideas to the kitchen.
Andreja Varga
Like many of her Croatian compatriots, her warmth and hospitality are innate. Her experience and charm make her an important part of our service team.
Natalie Hruba
She guides our guests to their tables and through each wine list with competence and good humour. In short: a ray of sunshine who fits perfectly into the team.
Martin Kulmhofer
Not every restaurant has a maître de plaisir who is actually a pleasure to deal with – but we do. Our Styrian roots may have something to do with that.
Dominik Kawa
Nothing fazes Dominik. He is the proverbial reinforcement of our service team, which ensures smooth operations and satisfied guests.
Darius Novakovics
His passion isn’t just about providing the best service for our guests. Tasting wine and spirits is one thing; really knowing your stuff is quite another. Darius has a passion for both.

Paloma Stein Siqueira
For Paloma, maintaining high standards of service and always prioritising guest satisfaction is a matter of course. Flexible and able to cope well under pressure, she supports the team in all aspects of their work.

Thanks to her wide range of skills, she handles both recruitment and office administration and bookkeeping. In other words: she’s always ready with a smile and keeps everything running smoothly.

Sreenandana also studies AI, but she scores points with us for her naturalness. Quick, focused and always friendly, she is a real asset to the team.
Frantisek Csirke
Frantisek Csirke captivates you in the most delightful way: he is a true artist at the piano and knows exactly which piece of music best suits the mood of our guests at any given moment. He has been providing musical accompaniment in the piano room for over ten years.
M-Tammam Alwily
A fixture in kitchens for many years:
M-Tammam is more resilient than almost any other – and when it matters, the mincer runs at full speed.
Ramona Moloman
She brings enormous skill to our kitchen, along with structure and pace. She teaches our apprentices one of the most important recipes for success in the catering industry: perseverance!
Oskar Egger
His all-round skills, his big heart and his background make him the ideal candidate for the role of a versatile stand-in. Oskar trained with us, spent several years in Switzerland gaining experience, and is now back at the White Chimney Sweep
Finn Süchting
Hamburg meets Vienna: Finn brings German thoroughness, fresh ideas and a good dose of North German humour to our kitchen – and it’s thoroughly addictive.
Akon Shifat
Always ready, always reliable, a true kitchen original. We wouldn't want to be without Akon's dedication and commitment for a second.
Valentin Hartl
Still in training, but already well on his way to becoming a sugar artist. We won't reveal here whether he's ‘a real sweetie’ in private, but in any case, thanks to his desserts.
Vladimir Balashov
Vladimir is further proof of the diverse talents in our team – thanks to a great deal of passion, the next generation is growing up here.

One of our colleagues in the kitchen team has a big name (even if there’s an ‘f’ missing). And he certainly has everything it takes to make a career for himself – at least in the catering industry.

As a kitchen assistant, Kawa is right in the thick of things and part of our international kitchen team. Here, we cook, season and laugh together.

As a dad, he keeps everything running smoothly at home; in our kitchen, he makes sure everything is tidy and spotless. In other words: a family man, a natural organiser and an indispensable kitchen helper.
