Kaiserschmarren pancakes with plum sauce


  • 8 eggs 
  • 4 T Sugar 
  • 1 pinch of vanilla sugar 
  • 80g flour 
  • 1/8 l Milk 
  • Raisins, as desired


Preheat oven to 180 Degrees. Separate the eggs, mix the yoke, milk, sugar and flour until smooth, beat the egg whites together with the sugar until stiff and fold into the yoke mixture. 

Melt a generous amount of butter in a pan and pour the Kaiserschmarren pancake mixture over it, sprinkle with raisins, and put into oven for 15 minutes. 

Then remove the Kaiserschmarren from the oven and divide it into bite-sized pieces, add a few little chunks of butter, dust with confectioner´s sugar and let this all melt together. 

Fort he plum sauce, heat 500 g pitted plum halves with 100g sugar, ½ a grated orange rind and ½ a grated lemon rind plus a cinnamon stick and let simmer for about 30 minutes; the plums should not fall apart. 

Arrange the Kaiserschmarren on warmed plates, sprinkle with confectioner´s sugar and serve with the plum sauce on the side.
