The atterochs cattle graze on the green and juicy meadows around Attersee Lake. The meadows of clover and herbs give the meat its incomparable spicy flavour. Added feed, including domestic grains such as corn, wheat and barley help to build up intramuscular fatty fibres, which make the meat particularly juicy and concentrate the delicate flavour.
